We sell custom beef - This means that customers have the ability to select exactly what they want out of a quarter, half or whole animal.

We take pride in selling beef to customers from cattle that are born and raised on our place, however, in order to keep up with demand we also source cattle from other reputable ranchers that share the same values as us. Even though they may not be our own stock, we value the fact that we can provide families with an avenue to purchase quality bulk beef and support local, American farmers and ranchers!

American Wagyu

Carlson Livestock raises a cross between Angus and Wagyu cattle known as American Wagyu. This breed of cattle produces the most tender, flavorful beef in the world.

American Wagyu marbles more than any other type of beef, yielding fine strains of intramuscular fat within the meat that liquifies during the cooking process creating a meal in your mouth experience.

American Wagyu is also proven to be one of the healthiest meats on the market. It is rich in monousaturated fats (good fat) and high omega fatty acids, which improves heart health, supports brain function and boosts overall wellness.

We sell beef in BULK!

1/8, 1/4, 1/2 and Whole Beef

Buying quarter, half and whole beef will fill your freezer with a variety of cuts including steaks, ground beef, roasts, stew meat, soup bones and more.

HOW IT WORKS

  • Beef customers reserve a spot for the next available butcher date

  • Carlson Livestock raises and finishes cattle to a target weight and age

  • Once these cattle are ready for harvest they are taken to a local USDA butcher where they will be processed

  • The beef customer then will complete their own cut list, selecting what cuts of beef they want and the specifications including thickness of steaks and packaging options

  • The beef is dry aged for 14 days and processed to the customer’s specifications

  • The beef is then vacuum sealed and frozen

  • BEEF IS READY FOR PICKUP DIRECTLY FROM THE BUTCHER AND READY TO STOCK YOUR FREEZER

PRICING

  • All beef is priced at $6.50/lb of the carcass weight - this is the weight of the animal after slaughter, before butchering

  • In order to reserve a spot for our next processing date, customers need to pay a deposit of $100 per quarter

  • The remaining balance will be invoiced to the customer based on the hanging weight of the animal

    • 1/8 BEEF(50-60lbs. packaged beef) $700-$80

    • QUARTER BEEF (100-120lbs. packaged beef) $1,400 - $1,600

      • $100 deposit

      • Next butcher date: May 2026

    • HALF BEEF (200-240lbs. packaged beef) $2,800 - $3,200

      • $200 deposit

      • Next butcher date: May 2026

    • WHOLE BEEF (400-480lbs. packaged beef) $5,600 - $6,400

      • $400 deposit

      • Next butcher date: May 2026

We are a small family run operation, with that, we have our hands in every phase of our cattle operation (besides butchering). We are not too big to take a phone call from customers and talk through the whole process. We love what we do and enjoy talking to people about our cattle and beef.
